Tug-A-war In The Kitchen

Two weeks ago I cooked baked ziti for my family.  This week it’s authentic baked mac & cheese.

While they enjoy the dish and look forward to traditional meals, I feel like a heel for feeding it to them.

Some of the meal are loaded with the unhealthy fats.  Whenever possible, I substitute with “low fat” this, “low sodium” that, Non -GMO Verified, ingredients and more. So although, I do what I can to prepare healthy meals, mom and hubby are grown folks and I have no right to make them adapt to my eating styles. I can only encourage and educate them and hope they make healthier choices.

I had a moment while running through the aisle of Shoprite.  Lol!!  I like using the new smaller carts with two baskets; one on top and one on the bottom.  I was filling my cart with one gallon water jugs and got a glimpse of the contrast of the basket contents.

cart1There was no more low fat cheese; cheese was on sale.  They like the mac & cheese better with the whole milk. I can’t find whole wheat pasta in elbows. And the corn muffins, well, their delicious!  Lol!

Water. Chicken breast (I wish it were organic).  Flaxseed. Brown rice. Black Rice (new to me).  I don’t know what this black rice is going to taste like, but I’m always up for trying new foods.

mac and cheeseThey will be grubbin on a scrupulous (Yes, I tasted it…OMG! It’s delicious) pan of mac & cheese, while I experiment with great anticipation, a plate of hot fluffy black rice.  🙂

I could very easily eat the mac and cheese with dinner, but I won’t.  Why?

  1. Goals!  written-goalsIn 2015 I will compete again, so I’m on a mission.

  2. My body no longer appreciates the cheese, milk, and the pasta, so I’d rather not suffer through the consequences. Feeling bloated, gassy, and down right uncomfortable.
  3. I understand the health benefits of avoiding certain foods and eating clean, so all is good. 🙂

Best believe the next meal I cook for my fam is going to be healthier!  Lol!!  To help me (mentally) and them (health wise), I try to rotate and vary meals.

I have to go check on the black rice and finish cooking vegetables (broccoli and kale) for dinner.

Spinach And Kale Corn Chips

Yes. I too have an occasional craving for a chip or two.  Well, not quite a regular potato chip, but something that has a similar crunch to it but with less sugar, sodium, and processed gunk.

I know, I can make fresh-baked chips from carrots, kale, sweet potatoes and more, but sometimes I need a quick fix.

I found these Spinach And Kale Corn Chips in the most unlikely place; TJ Maxx.  Yeah, I checked the expiration date and packaging.  They cost $2.99.  I like them; they’re tasty and hit the spot.

IMG_3438.JPGOne serving size is 10 chips.  I ate about 12 or 13 chips, immediately put the bag away, and ran upstairs to brush my teeth. Once I brush my teeth, I am done eating for the night. They were delicious and I didn’t trust myself, so I had to leave the room and go upstairs.  I am dead serious!  I give these tasty treats two thumbs up.

Autumn Sunday Mornings

Howling winds woke me this morning; it sounded cold out there.  SJ is cold (44 degrees) and to think that in a few hours, we’ll be on the football field.  So you know I couldn’t wait to…

Have my first official wood burning of the season!  Besides the warmth the fire brings, I also enjoy the crackling and wood popping.

Freshly cooked omelets were in order, so I put my chefs hat on for myself, hubby, and B’Dazzle.

An omelet isn’t the same for me without veggies.  This one has spinach, mushrooms, fresh garlic, red, and orange peppers– oh and crushed peppers.

My plate was meatless.  Yummy! Hubby and B’Dazzle had sausage on their plate.

Because of the rain yesterday, B’Dazzle’s conference football game was rescheduled for today.  While we’ll be dry, it is going to be COLD on the field today.  I’ve got hand and toe warmers for B’Dazzle and any other player who needs or wants a pair.  You bet, I’ll shove a pair of warmers in my gloves and boots.

It’s easy to make and perfect for a day like today.  After the game, I hope to do some catching up on much-needed blog time in front of the fireplace while grubbing on a big bowl of spicy and healthy Jambalaya. Mmm…

A Beautiful Habit

Boo!!  Lol!  Good Morning!

I just packed my lunchbox and got excited at the beauty of lunch; it’s so pretty!   It’s okay, I’m cool if you don’t get it.  When you eat clean, you see food differently and appreciate the natural beauty of vegetation.

Anyways, the meat is from Sunday’s food prep session; center cut pork loin.  We ate the last of the cooked veggies yesterday, so I tossed in a couple handfuls of a kale medley blend (spinach, kale, chard, and carrots), drizzled pan juices from the cooked chops, and placed the chops on top.  A half-cup of brown rice is my side.

Mmm…. makes for a delicious and nutritious lunch!

A Second Chance

Going to the gym and forgetting my purse is becoming a habit.  A bad habit. This morning I was so focused on getting to the gym that I did it again.

Five minutes away from the gym, I realized I did not have my purse, but I wasn’t about to return home.  That would have cut into my workout.  I would rather take my chances and get stop by the local police.  Slow your roll girl!  I made sure to follow the speed limit, especially in the 25 mph zones.

My day blew by!

Nearly two hours working mostly on my back and a little shoulder.  I have no idea why, but today a couple of folks wanted to stop and chat.  Me… Mrs. Chit Chat was trying to get through my workout.  Ear buds neatly tucked in, head boppin and all… it did not stop them from getting my attention.

One was a couple.  The guy age 65 (he told me), who looked every bit 10 years plus younger.  Nice body!  I could tell he knew what he was doing in the gym.  The girl… well… nice. Huge 80’s style hair, very thin, and bright eyes and pretty smile.   The gentleman complimented me on my physique.

Moving from the cable equipment to the back machines, a 50ish looking male with a solid body stops me… his white hair gave his age away.

“I’ve been watching you!  Your form is excellent! You are doing everything right!  Keep doing what you are doing kiddo!”

“Kiddo!”  Lol!  He has not idea I’m well over 40.  Love it! I thank him and go to put my ear buds back in.  He leans over to tell me that he is or was (I forget) a personal trainer for years.  It took me like 4 or 5 attempts before he finally stopped talking.   Although I did respond, I needed to get back to my workout.

Yes, I finally got through it.  I got home by noon, just in time to meet “Arnold” who runs a home cleaning service.  I need someone to clean my home.  I can’t do it anymore.. truthfully, I don’t want to do anymore, so I’m not. We were suppose to me to discuss my needs, prices, and availability.

I race in the door, quickly fix my post workout meal (oats & eggs) and wolf it down.  15 minutes later.  Where’s Arnold?

I can’t wait, I’ve got things to do. In 2 1/2 hours, I did Shoprite, Bed Bath & Beyond, BJ’s, Macy’s, and the dreaded Walmart.  Hold up…  I don’t hate Walmart, but there are certain times that you do not shop at Walmart in my area and I was in the heart of it. But since I have a busy week, I put my music in my ear and braved the madness.  Lol!

Once home, I cooked a big pot of chilly and prepped a pot of kale.  I called the nail salon. It was 3:45 p.m., the salon’s last appointment was 4:30.  I turned the chili on low and tell hubby to watch it.  It’s Sunday afternoon football; that was a dangerous move.  I was smart enough not to turn the kale on. I called him on my way home from the salon to turn the pot on.

I raced out the door 10 minutes later and got to the nail place at 4:16.  The best thing about driving on a Sunday afternoon is that, at least here in South Jersey, everybody is somewhere watching football.  The roads were clear.  Thank God!

Yay I got my nails done!  Those sparkles on the black polish are still growing on me, but guess what.  This chica is #happy about getting my nails done today.

#100 Happy Days Challenge #Day 26

Question.  How do you not engage in conversation at they gym?  The social butterfly that I am, loves to chat; however, on most days, I need to skip the chatter.  Should I buy BIGGER headphones?  Any  tips?  Oh please do share.

Geez… do you know what time it is?  Oh gosh… it’s past my bed time.  I really must go.

I hope you had a great weekend.  I did.  B’Dazzle’s JV football team beat another team 36-0!  Sweet!  He did his job as nose guard very well.

Okay.. I’m going this time.  For real!  Lol!

Oh  wait… at 6:54 p.m. Arnold (the owner of the cleaning service) texts me the following:

Wow, I just remember(ed) now, supposed to be there noon time today, completely forgot.  It’s Arnold.  Apology, do you want me to go (come) another time?  Really sorry.

OMG!!  LOL!!  Arnold came highly recommended by a neighbor. Everyone makes mistakes.  I believe in second chances, so I did reschedule. If he forgets this time, it’s a wrap and I will move down my list of recommended cleaning companies.

Serious… Sweet dreams!  🙂


How To Stay Fit And Motivated

A great way to stay fit, have fun, and to meet new people is to take part in local sporting events.  I find events by talking to other fitness fanatics and from one of my favorite sites, Active.

Yesterday, I participated in Atlantic City’s first ever, Insane Inflatable 5K.

Inflatable what?  I know!  Lol!!   I thought the same.  But once I visited the website, back in March, I knew I had to do this crazy looking event. You can see pics of yesterday’s run here.

Climbing, crawling, bouncing, running, sliding up, down, under and through ginormous inflatables is something I never imagined myself doing.  But it was worth every aching muscle that I feel this morning! :0)

Crazy-Air

I do not have my own pics because I ended up running solo because hubby and B’Dazzle were still sleeping when I left the house.  Next year, the entire family is participating!  And yes, I already put them on notice.  Our son will love it; I am not certain about hubby, but it is a perfect family “active” event.  Lol!   Oh… it’s definitely ON for next year.

Though I ran solo, I really did not feel alone.  Along the course, I met an awesome 10-year old asthmatic that kicked butt!  He didn’t allow his asthma to stop him as he led the pack of the 9 o’clock wave half way through the course.   I told him that he rocked.  His reply, “You too!”

One group of women I met drove nearly two-hours for the challenge.  The course was set up at an old airport.  Parts of the course were paved, other sections included two-foot high weeds; we laughed at the “battlefield” and dodged potholes through most of the run.

I have always lacked a sense of direction and was thankful to run through an insane maze following some girl.  We ran through only to find that we were at the start of the maze.  Sigh! Back in again. Of course, I ran right on her heels.  I really thought we were running in circles, but she got us through… I thanked her!  Lol!

This morning, I feel like I weight trained yesterday.  My hamstrings, quads, and shoulders are sore.  No longer do I feel guilty about not hitting the gym yesterday.

With your doctor’s blessings, this is an ideal way to get started.  Just do it!  The run is not timed.  There are no losers.  Everyone wins by showing up and having fun.

I am asked all the time about how I stay on course to stay fit.  It’s pretty simple, I do everything on this list:

  1. My number one goal is to have fun. Be silly and laugh at yourself. Don’t take yourself so serious.
  2. Be open-minded to try something new.  There are many ways to      exercise, dabble in something completely different. This inflatable run was different for me.
  3. Seek new challenges and set new goals.  Ex: A mud run is on my to-do list. Confidence grows steadily with accomplishments.
  4. Stay away from the scale; it is not an accurate measurement of your overall fitness level.
  5. Be aware of what you eat and drink. Read labels! Drink water!
  6. Set your mind to try new recipes. I eat foods today that I did not know existed a few years ago. I continue to add new healthier foods to my diet and subtract foods that I discover are unhealthy.
  7. Connect (In person or on Facebook, Instagram, Twitter, etc..) with other fitness fanatics. We will encourage and inspire you and help to keep you motivated.
  8. Educate yourself.  Read about nutrition and fitness every opportunity you get. The social networks are saturated with fitness guru’s who are eager to share what they know.  Of course, everything you read is not true or accurate, so do your research. Right now by favorites are bodybuilding.com and fitnessrx for women.  I follow a few good boards on Pinterest; you can follow me there at Lexa82.
  9. Don’t give up.  If something does not work for you, move on.
  10. Remember, there is no such thing as perfection.  Don’t compare your body to someone else’s. Just work to be YOUR best.
  11. Don’t be afraid to participate in an event by yourself. You will make new self discoveries and gain lots self-confidence.

After the run and later in the afternoon, we (hubby and B’Dazzle) met other family and friends at a free outdoor concert at Gardner’s Basin in Atlantic City. The weather was beautiful! I sat in my beach chair, chilled, ate, drank two well-earned margaritas, danced to a DJ and to the sounds of S.O.S. Band. Remember them?

Personally for me, eating well and exercising makes me feel amazingly well. Increased energy, better productivity, and an overall happier mental and physical state of being are some of the benefits of living a healthier lifestyle.

49 feels way better than I ever thought possible!

I cannot stress the importance of making fun a part of your fitness regimen. This is how I do it!
