Try this quick and healthy dish

Now that I am retired, and although I am not quite settled,  you can expect to hear more from me more than you ever did in the past. Yay!

I want to share my lessons with you and to improve my writing. One way to get better is to write more frequently.

Sleeping past 4:30 a.m., my old morning ritual, is doing my mind, body, and spirit well.

After the gym, I felt a strong urge to whip up a nutritious meal in the kitchen.  Of course, my new kitchen is fabulous and enhances my cooking experience. I thank God every day.

If you keep vegetables in the fridge, you can always put together a fast meal.  Even if you think you can’t cook, I betcha that you can do this!! 

When I opened the fridge, I did not know what I was going to cook.  That said, check this out…

Mushrooms, sweet onions, freshly ground black pepper, garlic powder, crushed red peppers, and olive oil sautéed in a pan.

Unseasoned natural turkey patties. I buy them when they are on sale and keep them in the freezer.

Since I am shopping in a new community and at new grocery stores– Kroger and Publix, I am feeling my way through the aisles, looking for healthy food items at the best prices.


I recommend buying meat unseasoned because you can control the amount of sodium and other ingredients.  Here I sprinkled freshly ground pepper, a dash of sea salt and a little Cheyenne pepper.


I planned to make a kale salad, so I had a bunch of kale already cleaned in the fridge. I grabbed two handfuls and tossed them in a pan with onions. Sprinkled with the same seasoning, except the Cheyenne pepper, they cooked for less than 10 minutes.


Finished product- two turkey patties smothered with mushrooms and Vidalia onions (no gravy, sauce or additional condiments needed), next to freshly sautéed kale.

There is no way possible that you can convince me that you can’t cook this. Give it a try and please tell me how you made out.

Besides this dish is an ideal post-workout meal, it’s an easy meal prep idea, as well as dinner.  I could take this turkey patty to a new level but the idea was to be simple.

If you don’t eat turkey, sub with beef or seafood. If you’re a vegan, have the mushrooms over quinoa.  There are always options, the main idea is to put your creative hat on and have fun.  Cooking shouldn’t be serious.

After lunch, I unpacked more boxes.

As I write this from my cell phone, I’m getting a much-needed pedicure. My feet are tired.

I worked legs this morning at the gym and the hardwood floors at home make the bottom of my feet and ankles hurt.  I recovered a few years ago from a severe case of plantar fasciitis. I should not be walking barefoot on hard surfaces but I am a woman with island roots so I love to walk barefoot!  Hahah! But no more. Tomorrow I’m buying footwear that is it strictly to wear at home.

Happy Friday! It is the day after and the hype of the Christmas holiday is over.

I’m chillin big time this morning and I am also feeling unusually sluggish. Ugh!  Yesterday I indulged in crap that I don’t normally eat (mac & cheese, apple pie, and cookies) and… I sipped on two drinks (vodka with a splash of mango grapefruit juice).

My body is not used to the sugar, white flour, cheese, and stuff, so I am not feeling my normal energized bunny rabbit self. 😦

Between the diet and all the running around, I decided to rest this morning. I don’t think a gym workout would have been best.

This morning my heart is full of joyous memories from spending the day with my family and friends. The joy and the love I feel on Christmas is priceless and has nothing to do with receiving gifts.

Quality time with my family and friends, laughing, playing games, watching movies, and getting up-to-speed on everyone’s’ life is heart warming. Images of genuine smiles and twinkling eyes are priceless!

My favorite moment was the look on my mom and my aunts faces when they each received a copy of their own photo book. The photo book was 21 pages of unseen photos of the grands, great grands, nieces, and nephews.

The remaining aunts ( 6 of 9) are well over age 70 and are not on any of the social networks.  The younger generations often share photos and events online, but the elders don’t get to see them, so we put them together in a book.  Their ooh’s and ah’s were the highlight of my day. Absolutely priceless!

The past few weeks were hectic but worthwhile, so I thought I’d share some of those moments with you. 🙂

What’s next?  Something I rarely get to do.. a midday nap!

Random Cuteness

IMG_7254B’Dazzle is so handsome and is proudly wearing his first genuine leather men’s coat today!  My baby is growing up!

Saturday this fierce little dude held it down in his position as nose-guard for our township’s Junior Varsity Football Team!  He is lean, well-defined, weighs 86 pounds, and 4’9″ inches tall… And strong as a bull. It takes two and sometimes three football players on the defenders offensive line to stop him.  Saturday’s game was a good one, but his team, the Eagles came out on top with a win of 14-12.  Yay!!!

Who says size matter?  Haha! Athleticism is much to do about heart, will, determination, dedication, and drive….  He’s got all that and then some!

Did I mention that he eats all kinds of veggies, including the one’s most kids love to hate like spinach, zucchini, and asparagus?  When he’s in the kitchen with me, raw onions, garlic, and colored peppers are his favorite snacks.  Is his unusual strength genetics?  I don’t know, but I know that good nutrition in kids matter too.  The earlier you start most kids on veggies, the greater the chances they will eat more of them.

Summer Fitness Fun

Fitness should not be boring and mundane.  Staying in shape is about having fun and finding creative ways to workout.

By now, everyone should know to take the stairs instead of elevators or escalators, but it goes further than that.

Hubby worked today so it was only me and B’Dazzle.  After an hour of football camp, we played in the backyard. Listening to my favorite summer getaway tunes,  Shaggy, Michael Franti & Spearhead, Straight No Chaser, I’m Yours/Somewhere Over The Rainbow, and whatever else Pandora came up with, we left the state.  Ha! Ha!! Metaphorically speaking of course. LOL!

We floated in the pool for bit then move to intense water gun and super soaker water fights.  My demise came with bat mitten.  After both of us missing the ball way too many times, we upped the ante.

Whoever missed a “catchable” ball/mitt had to do 10 push ups at the command of the other.  I was certain that my son would be doing more push ups!  Ha!  The joke was on me. His hand-eye coördination is better than he let on.  I found myself kissing the grass doing push ups at his command.

Up! Down! Up! Down! Don’t come up until I tell you too!

I stopped counting at 50!!  Lol!  He reminded me that that’s how it’s done in football.

Me:  I’m mom!

B’Dazzle:  Oh well, that’s how it’s done in football!!

He took great pride in standing over me counting.  So while he got to shout orders at mom, I got some exercise in too.  Lol! Had a blast with him out back.

Speaking of fun, today I made one my favorite summer cocktails.

I know the glass could have been nicer, but I needed a cup that would be stable while floating in the pool.

Mango Smoothie

1 cup of frozen mango
2 shots of Tequila
2 shots of Grand Mariner
splash of sweet and sour
1/2 cup or so of crushed ice

Combine ingredients in a smoothie cup.  Blend and serve in your favorite glass. Garnish with a strawberry and enjoy!

This is not a low-calorie drink, but I’m human and occasionally treat myself.  I floated in the pool while enjoying my frozen treat.

To Do, Or Not To Do

I’m so excited!!  After grappling over vibrant fabric samples with cool textures, trying to figure out which color will look best against my tanned brown skin on stage, I finally decided.

I did it!!  There is NO turning back.

I ordered my suit for May’s competition!

Climbing out of bed daily with knotted up muscles and over indulging in poultry seven days a week at times has made training feel surreal, but putting a deposit on my suit has snapped me right out of my dream.  It’s the real deal.

With seven weeks out, the intensity is rising.

On Saturday I attended a local ANBF Bodybuilding competition, which was helpful.  I know how my body should look, feel, and flow on the stage.  The images are permanently stamped in my mind.

Taking on this challenge was the right move for me. You know, life is just too darn short to sit around slighting yourself.  I can’t do this… because.. blah…blah…blah…

I chose to do.  What about you?
